Spring rolls

Ingredients:
1 grated potato
1/2 cabbage shredded one carrot julienned 150g pork mince
2 cloves garlic 1 onion finely sliced 2 tbsp soy
sauce grating of ginger pinch
of five spice dash of fish sauce salt and pepper spring roll wrappers or filo pastry. Method:
Fry
crushed garlic ginger and onion until tender then add
pork mince and cook for further 5 mins. Season with salt , pepper and
five spice. A little fish sauce to taste. Add 1 cup of water or vege
stock to
meat and mix with and cook potato, carrots and cabbage until just tender. Set aside
until cold. Put about 2-3 tbsp of filling on top of wrapper and roll up
tucking in the sides. Seal with little flour / water mix. Deep fry
in hot oil until golden brown or place on oiled oven tray and grill at
200c turning when golden brown. Variations:
(a)
Use precooked rice instead of potato. (b) Add a tsp of curry powder. Hints:
Make small rolls as finger food entrée or larger rolls for main course
. Soy Sauce or Sweet Chilli Sauce for dipping.

Rollups
Ingredients: 1 loaf real fresh sliced white bread 1 pottle cream cheese
bacon rashers.
Method:
Cut the crusts from the bread Spread softened
cream cheese on slices and place precooked bacon rasher on top. Roll
the bread from corner to corner and skewer with a toothpick to hold
together. Place on oven tray and grill in oven turning to brown
Variations:
Bacon and Avocado ~ Chicken and
Avocado ~ Bacon and Asparagus ~ Bacon and Chesdale Cheese
Slices Smoked Fish ( in white parsley sauce) ~ Tasty
cheese and onion ~ Baked beans and bacon ~ Tomato and ham or bacon

Bread Rollies
1 pot of cream
cheese , mixed with a tin of drained salmon some lemon juice and 1
grated onion .
Mix well and spread onto bread that has had the crusts removed and
rollup.

Bacon and Egg Yorkies
Precook some bacon rashes and
chop into pieces In a bowl, make an egg mix with salt,
pepper, grated cheese and diced onion and mix well.
Add the bacon pieces Now make some Yorkshire
puddings in muffin tins.
Once the yorkies are cooked and risen, poor some of the mix inside and
place back in oven till the egg mix cooks and sets

Bacon and Cheese Mash
Make mashed potatoes with cheese,
pepper and salt in it. Derind some bacon rashers and wrap the mash
up, securing with wet toothpicks
Shallow fry in a frying pan in oil / butter until bacon cooked through.

Vol au Vents
1 cup cream 1 cup milk 4 tbsp cornflour
1 cup slice mushrooms 125 gms crumbled blue cheese Vol
au vent cases
Combine milk, cream, cornflour in small saucepan and stir bringing to
boil. Stir in blue cheese and mushrooms. Spoon into cases.
Bake in moderately hot oven for 10 mins to heat through.
Variations:
Add a bit of colour to plate with
different colour capsicum.

Bread Cases
Cut the crusts off the bread and
butter one side. Place in muffin tin and cook in a 180c oven for about
10 mins to go crusty
Fillings:
(a) smoked fish in
white parsley sauce
(b) pre fried bacon pieces, a
little diced onion, and pour in beaten egg with salt and pepper.
Into oven till egg sets
(c) spaghetti and bacon pieces
(d) mashed potatoes with
~ pan-fried onion bacon capsicum corn mushroom.
(e) mashed kumara with
pineapple
(f) savoury mince with peas
and carrots

Mousetraps
Sprinkle of parmesan cheese if
desired
I use Baps split in half but you can use toast
bread with two opposite sides cut off.
Grill one side of Bap or bread Spread a little butter and some
marmite/vegemite which ever you prefer. Spread a little watties
spaghetti on top.
Sprinkle a few pre-fried bacon bits and then grated tasty cheese. Add
some black pepper and place under grill until cheese melts.
Variations:
Use: ham chunks ~ pineapple pieces ~ tomato paste ~ diced tomatoes
~ diced onion ~ diced capsicum ~ tomato relish ~ chutney ~ salami

Scotched Eggs Ingredients:
6 hard-cooked eggs chilled 500g sausage meat 1/2 cup flour 2
eggs beaten 3/4 cup fine bread crumbs Vegetable oil for frying
Method: Peel
eggs and set aside. Divide sausage into 6 portions. Roll each egg in
flour and with hands press a portion of the sausage around each egg. Dip
sausage-wrapped eggs into beaten eggs and roll in bread crumbs. Heat
vegetable oil to 180C. Cook each egg in oil about 4-5 minutes or until
sausage is cooked and browned. Drain on paper towelling. Serve warm Variations:
(a) Use "Coat n Cook" instead of breadcrumbs for
a magic flavour. (b) Add very finely chopped red and green capsicum and onion to
the sausage meat. (c) Sprinkle a little paprika into the sausage meat

Home Made
Sausage Rolls Boil pork sausages and remove
skins. Microwave some onion rings, take 2 x sheets of filo and put on a
sausage. Add onions some grated cheese and tomato sauce.
Roll up, place in oven for 10-15 mins and turn as required watching they don't
burn

Stuffed Sausages
Grill your sausages until golden brown and split them through
the middle and fold open. Add mashed potato
with squirt of mint sauce while mashing and layer over sausages. Sprinkle with salt and pepper
Layer grated cheese over the top and grill until golden brown. Variations:
(a) Mashed potato, cheese grated and diced onion. (b) Mashed
potato, cheese grated and tomato slices. (c) Mashed potato, cheese
grated and
mashed pineapple pieces. (d) Mashed potato, cheese grated and pre
fried bacon bits (e) Mashed potato, cheese grated and watties
spaghetti (f) Mashed potato, cheese grated and pickle /
piccalilli or chutney

Stuffed Potatoes
Put a large potato/s after scrubbing clean, into the
microwave on high for 20 mins Remove and let cool Slice a piece off the
side, scoop the cooked potato out with a spoon, leaving a reasonable
thickness of wall. Mash the potato, add grated cheese, bacon, onion,
chilli or herbs. Crumble some cheese over the top and put
it in the oven on high till browned.

Bacon, Cheese
and Onion Croquettes
2 cups fresh soft breadcrumbs
2 spring onions 1 cup grated cheese 3 rashers bacon
1/2 tsp salt pepper 1 cup dried breadcrumbs 1 egg
1 tbsp water
Add sliced spring onions to soft crumbs, add cheese. Mix in diced bacon
and season. Leave in fridge to cool . Shape as required.
Beat egg and water, dip in croquettes then roll in dry crumbs. Place in
fridge to help set and then fry in butter/oil.

Kumara
Croquettes
4 med kumara 225g can crushed pineapple 2
rashers bacon chopped parsley 2 eggs
2 tbsp pineapple juice 1 tbsp cornflour
1tbsp water 11/2 cups dried breadcrumbs 1 tsp ground cumin
1/2 tsp ground chilli 1/4 cup oil
Boil and mash kumara
Chop bacon into small pieces and mix into kumara with parsley and adding
one of the eggs. Mix in pineapple.
Add reserved pineapple juice if too dry. Beat 2nd egg cornflour and
water together Shape kumara mixture into oblong shapes.
Mix bread crumbs and spices together and dip croquettes into egg mixture
and then breadcrumb mixture.
Put oil in baking dish and roll croquettes in oil, bake 200degc 20 mins
or till golden.
