Garlic and Chilli Butter
This is used as
a dipping sauce for mussels cooked in the shell on the BBQ Place
125g of butter in a small bowl with 3 tsp of prepared garlic
1/4 tsp of prepared chilli 2 tbsp of finely chopped
FRESH parsley Place bowl in microwave and cook until butter melts
Remove and mix well More or less chilli can be added according to
taste. You can also leave the chilli out if you want .I also brush small rolls with the dipping sauce
and toast on BBQ

Lemon Parsley Sauce
Great over fish
Take ~
1/2 cup butter 1 tbsp fresh
lemon juice 1 mashed garlic clove 1/2 cup chopped fresh parsley
Melt the butter in a small saucepan.
Stir in the lemon juice, garlic and parsley. Blend well and stir over low heat
for several minutes

Barbeque Rib Sauce
Suitable for Pork or Beef
Ribs ~ Beef should be simmered until tender and drained before
marinating and barbequed Ingredients:
1 tsp hot english mustard 1 tsp paprika 1/2 tsp
oregano 1/2 tsp cumin 3 tbsp peanut oil 2 crushed cloves garlic 1 cup tomato sauce 1 tsp tabasco or
similar 2 tbsp worcestershire sauce 1/3 cup tomato paste
1/3 cup brown sugar 1 tbsp brown vinegar
Method: Mix the mustard and dry spices with the
oil in a saucepan. Blend in the sauces and remaining ingredients
Cook on a med heat for 5 mins stirring until combined. Cool before
refrigerating. (Store half for later use in glass jar with lid) Coat your
ribs and marinate over night.. Cook on BBQ turning frequently until
cooked through.
