summer savoury, garlic, onions, dry mustard.

Green Beans with Tomatoes
Ingredients 700g fresh green beans 1
x large ripe tomato, cored and chopped 1/2 cup onion, diced
1 x chilli pepper, seeded and cut into julienne strips 1 x clove garlic
2 x tbsp olive oil 1 x white potato cubed salt and
fresh ground pepper to taste Method Wash green beans and trim stem end, set aside. Wash core and chop
tomato, no need to remove skin. Heat olive oil in a non stick pan. Add
onions and sauté for one minute Add garlic and tomatoes, continue to
cook for one minute. Add green beans, toss, add potato, season
with salt and pepper. Add in a cup of water, cover and simmer for 10
minutes or until potato is tender. Check potato by pricking with a fork.
Serve hot.

Green Bean Casserole
Ingredients:
3 cans green beans 1 can tomato puree 1/3 cup
parmesan cheese 1 cup sautéed mushrooms
Topping: 1 cup breadcrumbs 1/2 cup parmesan cheese 2/3 cup butter
Method:
In mixing bowl add all
ingredients for casserole. Mix well. Pour into oven proof dish. To make
topping, put all ingredients into food processor and whiz until crumbly Sprinkle crumble topping over casserole. Bake for 40 mins
on 180c deg. until topping is golden brown. |
