Braised Red Cabbage
Ingredients:
2  tbsp cooking oil   1  medium onion - sliced  1  tbsp soft brown sugar  1 large cooking apple - peeled and sliced  1/2 red cabbage - finely sliced
1  tbsp cider vinegar   6  Juniper Berries - lightly crushed  2  Bay Leaves  30g sultanas   Black Pepper Ground
Method:
Heat the oil and fry the onion until soft. Add the sugar and apple and fry for another 2-3 minutes. Stir in the red cabbage, vinegar, Juniper Berries, Bay Leaves and sultanas.  Cover and simmer gently for 45 minutes, stirring occasionally. Season with salt and Pepper. Remove the Bay Leaves and serve.

  German Red Cabbage                      Can add a splash of red wine
Fry 2 chopped onions in a little oil and add sliced red cabbage. Add water, salt and pepper, 3 bay leaves,  2 cloves and some juniper berries ( if available).
Let simmer, and then scrape brown bits from the bottom of the pot and add about 1/4 cup vinegar and some sugar. More vinegar if you want sourer.
When the cabbage is near done, add several peeled and sliced apples and cook further. Adjust seasonings and serve with your meal

Cabbage Rolls
Cook a mixture of spiced mince and rice...Now peel off some whole cabbage leaves (with the thickest part of the stem removed) and dip briefly in boiling water to soften. Place a large heaped spoonful of the meat / rice mix in the middle of a drained leaf, fold the sides over then roll up - from the stem end. Skewer with toothpick.
Keep going until you've used all the meat - placing the rolls in a shallow dish.  Open a can of chopped tomatoes add a touch of chilli, cumin and 1/2 can of water.
Pour over the cabbage rolls.  Bake for 15 - 20 mins in the oven at 180 degrees.

Cabbage Stir fry                             Add some mint leaves for that difference
Version one:

Clean , slice your cabbage and prepare silverbeet...heat some olive oil in a pan, add some crushed garlic and some onion salt. Add cabbage and silver beet and stir.
Version two:
Fry up sliced cabbage in butter, salt and pepper . Add diced precooked bacon and 1 tsp curry powder. You could add some diced onion as well
Version three:
Boil a few potatoes - while boiling, finely cut cabbage, grate two carrots and then add to mashed potatoes .
Mix, add onion salt, black pepper and using a heavy-bottomed frypan with a little olive oil, fry till golden.

  Mince and Cabbage Stir
In a wok, cover 500 grams of mince with water and cook for few minutes. Drain well, add a little oil and fry with a chopped onion.
Add some salt and pepper to taste. Pour in 400ml of warm water and simmer for 5 minutes. Mix in 1 packet of maggi chicken noodle soup
Mix in 1/2 a shredded cabbage, cover and simmer for 15-20 minutes stirring every 5 to stop sticking.  A little soy sauce if you wish.

  Caraway Cabbage
1/2 cabbage (red or green)    2 - 3 apples, grated skins and all     2 tsp caraway seeds    30grm butter
Melt the butter over a gentle heat. Add the chopped cabbage, apples and caraway seeds and cook with the lid on until the cabbage is cooked.
Remove lid and raise heat to evaporate the liquid. Serve immediately.

  Red Cabbage with Apple and Cinnamon
1/2 inch water in the bottom of your pot, add shredded red cabbage, 1 apple chopped finely, 1tbsp brown sugar and 1 tsp cinnamon.
Cook quickly till water evaporates then stir in 1 tbsp butter. Stir and serve

  Red Cabbage and Tamarillo Salad
1/2 medium red cabbage, sliced     6 onions, sliced     12 stalks celery, sliced    12 Tamarillos, peeled and sliced    2 cups sugar  
2 dsp common salt   1/2 cup oil   11/2 cups vinegar
Put sliced vegetables in a serving bowl and sprinkle with sugar and salt.  Mix oil and vinegar together and pour over salad.  Stir well and leave to stand several hours.
