Cauliflower Puree
Remove the florets and then slice flat, about  1/4 inch thick.  Season, salt with white pepper and sauté/sweat in butter but do not allow to brown.
Add just enough whole milk to cover,  2 bay leaves and the top of an onion with a few cloves studded and simmer until nicely softened and then add 3 tbsp of cream.
Bring to a high heat for a few minutes and then process using a blender or hand wand  till a thick puree is formed.
Variations:
Ingredients you could add depending on your dish..
A pinch or two of cayenne pepper         crushed garlic       grated tasty cheese        mild curry powder       dijon mustard
Ideal to add paprika and grated cheese and pour  over scalloped potatoes

  Creamy Cauliflower Supreme
Ingredients:

1 packet Creamy Cauliflower Supreme   450gm Cauliflower  11/2 cups milk

Method
:

Cut cauliflower into medium sized flowerets  Blend packet contents and milk together in a medium sized saucepan, add cauliflower and mix well.
Simmer over a medium heat, stirring constantly until mixture boils and thickens.
Variations:
Cauliflower could be replaced with the following vegetables    Broccoli   Spinach  Siverbeet  Potatoes (cubed)
To make a delicious soup:   Increase milk to 1 litre by either adding all milk or half stock / half milk.  Then puree with a wand

  Cauliflower and Eggs
Steam cauliflower florets till crisp and tender. Slice 4- 6 hardboiled eggs into quarters .Make a thick cheese sauce. Layer all in a dish and pour over the cheese sauce
Sprinkle grated cheese and breadcrumbs over top and grill till cheese melts and browns.

  Fried Cauliflower
2 eggs  1 head cauliflower, separated to bite size flowerets  1/2 tsp salt  3 tbsp milk  1 tbsp whole cumin seeds  1/4 tsp turmeric  1/4 cup peanut oil  salt and pepper
Steam the cauliflower for about 5 minutes; allow to drain. Combine eggs, milk, turmeric, salt and pepper. Place the cumin seeds in a ungreased skillet and toast.
Shake the skillet until the seeds turn a deep brown and begin to pop. Remove from heat. Add half of the seeds to the egg mixture. Reserve the rest.
Heat the oil in a skillet, dip the flowerets in the egg mixture, fry in several batches until browned on both sides. Sprinkle with the remaining cumin seed, salt and pepper.

Cauliflower Salad
Ingredients:
1 head cauliflower   1 chopped onion   2 stalks chopped celery  1 chopped green pepper   4 sliced mushrooms   5 hard boiled eggs
Best Foods mayo   1/2  tsp mustard   salt and pepper

Method
:
Steam cauliflower until just tender.. Drain well. Cut into pieces.. Mix mustard into mayo and add all other ingredients to cauliflower pieces.
Add salt and pepper to taste and lightly stir in the mayo mixture. Mayo mixture should be just enough to moisten the mix.

  Phul Gobi with Peppers  ( Indian )
IIngredients:
2 tbsp oil  1 sliced onion  1/2 tsp turmeric  1 cauli - broken into flowerets  salt  2 seeded green chillies  1  red, green and yellow capsicum (seeded and cut into strips).
Method:
Heat oil in pan and sauté onion until soft. Add turmeric and cook 1 min. Add cauli and salt to taste. Stir well to coat and cover. Cook gently until cauli almost cooked.
Add the chillies and capsicum, stir and cook another 5 mins until tender..
