Honeyed Chicken Drums
Brown chicken drums in a little oil and butter.  Mix in jug ~ 1 pkt Maggi onion soup  1 tbsp honey  3 crushed garlic and  1 cup warm water.
Pour over chicken and simmer until cooked. Thicken with cornflour and warm water if required.

  Coca Cola Chicken                      There will be no liquid left in the pan.
1 Kg chicken nibbles or drumsticks  2 cans coca cola  2 cloves crushed garlic  1/2 cup light soy sauce.
Mix coca cola, garlic and soy. Pour over chicken and cook for 20 minutes. Remove chicken. Increase heat and reduce liquid.
Return chicken and turn frequently over heat until chicken is coated and brown. The chicken will be coated with a sticky coating.

Spicy Chicken Drums
2 tbsp soy sauce   1 tsp sesame oil   1/2 tsp garlic   1/2 tsp cayenne pepper   4 spring onions, chopped
In a mixing bowl, combine soy sauce, garlic, sesame oil and cayenne pepper. Set aside. "Slowly" fry the chicken drums until nicely golden.
Spoon the sauce mixture on chicken and coat well  Add the spring onions pinch of salt ..grind of black pepper
Cook all basting chicken with sauce till heated thru.

Spiced Chicken Wings                   Can add ginger and garlic if desired
In a big bowl mix 1 cup yoghurt  1 onion diced  1 tsp coriander  2 tsp cumin  chilli paste to taste 1 tsp paprika  lots salt & pepper.
Mix well, stir in chicken wings. Marinade overnight. Bake in oven till cooked (about 30 mins)

Hoisin Chicken Wings                     Chicken wings or pieces
2 tbsp oil  1 clove garlic slivered  1kg chicken wings, cut into two   1 red pepper, deseeded and diced   6 spring onions, cut diagonally
2 tbsp Hoisin sauce   1 tbsp  tomato sauce  1 tbsp dry sherry  1 tsp honey
Heat oil. Fry garlic for a minute then remove and discard. Add wings and fry until golden brown. Add pepper and spring onion, stir fry 1 minute.
Add remaining ingredients and stir-fry coating chicken pieces.

  Herbed Chicken Wing Coating
Blend fresh bread in a processor adding parmesan cheese and parsley, a little salt and lots of fresh ground black pepper.
Dip the chicken in egg mixed with dash of milk and sweet chilli sauce. Roll chicken in crumbs and oven bake until cooked.

Honey Chicken and Sesame
Ingredients:
Chicken wings  salt and pepper to taste  2 cups honey  1 cup soy sauce  1/2 cup tomato sauce  1/4 cup oil  2 cloves garlic, minced
Method:
Rinse chicken and pat dry. Cut each wing at joint to make two sections Sprinkle wings with salt and pepper
Place wings in roasting dish and grill until chicken is brown.   Transfer chicken to crockpot..
For Sauce: Combine honey, soy sauce, tomato sauce, oil and garlic in bowl.  Pour over chicken wings.
Cover and cook on low 4-5 hours or on high  2-2 /2 hours     Garnish with roasted sesame seeds.

Chicken Chippy Crispy Chicken              Preheat oven to 180 c     Cut chicken thighs in half lengthwise
Ingredients:
1/4 cup of flour  1/2 tsp chicken stock  1/4 tsp salt  1/4 tsp white pepper  1 egg  150g chicken flavoured chips   6 boneless chicken thighs.

Method:
Place the flour, stock, salt and pepper into a plastic bag and shake. Now add the chicken and shake to coat the pieces. Remove the chicken.
Beat the egg with a pinch of salt. Crush the chicken chips into very fine pieces and add to the plastic bag and shake well. .
Dip the floured chicken into the egg and coat well with the potato chips. Place on a baking paper lined oven tray.
Bake at 180c for 20-25 mins until chicken is brown and the juices of the chicken runs clear

Lonestar Dixie Chicken
Cut chicken into pieces and flour.   Brown in oil.   Add white wine.  (1 kilo chicken = 200 mls white wine).  Cook until wine is reduced by 1/2
Half cover chicken with chicken stock in pan and simmer gently for 2 minutes.   Add cream to completely cover chicken and simmer.
Add finely chopped parsley, 1/2 cup grated carrot, 1 cup corn. Add spring onions 2 minutes before serving.

Peking Chicken
Boil a pot of water and ladle the scalding water over the chicken until the skin looks "sealed".   Don't dip the whole chicken into the water.
Dry off  and pat dry with a clean towel and let stand for an hour to dry thoughoughly. 
Make a baste mix with water and honey . Add some spices according to your taste, e.g.. garlic  ginger  rosemary thyme.
Place in oven dish and baste with the marinade while cooking.  Brilliant looking chicken with crispy tasty skin all over.

Indonesian Chicken Satay             Place wooden skewers in water for 30 mins

ngredients:
1/2 cup  teriyaki sauce   3 tbsp sugar  1 tbsp vinegar   2 tsp ground cumin  1/8-1/4 tsp cayenne pepper   2 cloves garlic, minced
Chicken loins or chicken breast strips   2 tbsp peanut butter   1/2 cup water

Method:
 
Mix first 6 ingredients and marinate 1/2 hour or more in fridge after skewering long strips of chicken. Turn occasionally 
Grill until done.   While grilling, mix the leftover marinade with water and peanut butter and cook a couple of minutes.
Roll the cooked skewers in the peanut sauce and serve.  Pour the balance of the sauce over cooked rice

Chicken Satay                                 Serve with rice and vegetables
3 chicken breasts diced (skinless and boneless)   ! small onion finely chopped   2 tbsp butter  1/4 cup peanut butter  1/2 cup chicken stock
1/4 cup honey   2 tsp mustard   1 tsp curry powder.
In a frypan with little oil, cook chicken till colour change. Set aside. In same frypan add a little butter and sauté onion  Pour in the stock
Stir in peanut butter, honey, mustard, and curry powder and stir  Add chicken and cook on med heat till tender.

Chicken Curry
Ingredients:
2  onions finely chopped   2 cloves finely chopped garlic   25g butter   1 tbsp curry powder   600g chicken tenderloins or breast diced.
400ml can coconut cream  1 tsp chicken stock powder or one oxo chicken cube  salt and pepper to taste.

Method:

Stir fry the chicken pieces for a minute or so and set aside. Fry onion and garlic in butter until soft but not brown, and add curry powder.
Stir and cook for a minute or two,  add the coconut cream, chicken stock and mix in well.
Now add the chicken pieces and simmer 15 mins, adding salt and pepper to taste
