Crock Pot Corned Beef
Add 2 tbsp of malt vinegar
if desired.
Wash your corned beef in running water, trim
off fat and
place in crock pot. Add one large chopped onion, 2 tbsp golden syrup.
Add a few cloves to a whole onion. Now add some sliced carrots, a bay leaf
or two and some pepper corns.
Add 2 cups of water
turn on low and leave it all day. ( I turn it once during the day ). Variation:
Can use 2 cups of good ginger ale instead of water Use NO WATER
/ LIQUID ~ Prepare your corned beef as above
using carrots, onions, cloves, bay leaf and pepper corns Turn on
Low all day. Now use the resulting liquids/gravy to make a
Mustard Sauce (Use in Lieu of boiling
water)

Beef Stew - Old
Fashioned
Dash of red wine is optional Ingredients::
1 kg beef stew meat, cut into 3/4 inch cubes 1/4 cup plain flour 1/2
tsp salt 1/2 tsp
ground black pepper 1 clove garlic, minced 1 bay leaf
1 tsp paprika 1 tbsp worcestershire sauce 1 onion,
chopped 2 cups beef stock 1 beef oxo cube 3
potatoes, diced 4 carrots, sliced 1
stalk celery, chopped 1 cup frozen peas Method:
Place meat in slow cooker. In a small bowl mix the flour, crushed oxo
cube, salt,
and pepper. Pour over meat, and coat all with mixture.
Stir
in the garlic, bay leaf, paprika, worcestershire sauce, onion, beef
stock, potatoes, carrots, and celery. Cover, and cook on low setting for
10 to 12 hours or on high setting for 4 to 6 hours. Add the peas 30 mins
prior to final cooking time.
Thicken with little pre mixed cornflour and water if required or
alternatively, grate a small potato into the stew and add herbs if
wanted.
Do the taste test and add salt and ground black pepper if needed. Remove
bay leaf before serving. Variation:
Add a packet of Maggi french
onion soup mix Add a few herbs to your taste near the end of the cooking
process. 1 tsp of dried thyme is recommended.

Topside Steak
Beef Stew
French sticks cut into rings
and toasted in the oven. .Little parsley garlic butter on top.
Topside steak, trimmed and
cut into 2 cm chunks. Brown the chunks a few at a time in sizzling hot
pan with a little oil and chunks of garlic
Add sliced carrots, diced potato, kumara and sliced onions and 2 celery
stalks chopped All layered over the base of the crockpot.
Add browned meat on top and a then few sliced mushrooms, salt, pepper
and a crumbled beef oxo cube Now pour 300ml stock over the top.
One or two 400g tin(s) of sliced mushrooms in butter sauce, lid on and
high for 5 hours. Test seasoning before serving Leftovers
freeze well.

Spiced Beef Stew
Best prepared night before Ingredients: 1kg chuck steak 3 tbsp flour 2 tbsp brown
sugar 1 tsp curry powder 1 tsp ground ginger 1/2 tsp mixed spice, 1/2
tsp salt 1 tbsp worcestershire sauce 2 tbsp vinegar 3 tbsp tomato sauce, 2
tbsp sherry 2 tbsp water. Method: Cut meat into 2 cm cubes and set aside. Combine
flour, brown sugar, curry powder, ginger, mixed spice, curry and salt in
the cooker. Add the worcestershire and vinegar and mix to a smooth paste.
Then add tomato sauce, sherry and water and stir. Place meat in the
cooker and stir again. Cover with lid and stand in a cool place for at
least 2 hours or preferably overnight. Switch cooker on and cook on low
for 8 - 10 hours. Serve with potatoes and green vegetables.

Beef in Guinness
Ingredients:
1.2 kg of blade, topside or chuck steak cut into 2.5cm cubes 2
onions finely chopped 3 cloves garlic crushed 1/4 cup flour
2 tbsp tomato paste
salt and pepper 1/2 tsp ground nutmeg 11/2 cup
guinness 3 tbsp cornflour 3 tbsp guinness (2nd
measure) 3 tbsp red currant jelly.
Method:
Combine the steak, onions and garlic in the crockpot. Sprinkle with the
flour and toss well.
Mix together the tomato paste, salt and pepper and nutmeg Add the
guinness and combine well Pour this over the meat and onions and
mix in. Cover with lid and cook on low 9 to 10 hrs or
high f 41/2 to 5 hrs. Mix the cornflour with the extra guinness.
40 mins before end of cooking time, stir in the cornflour mix. Stir in
the red currant jelly. Cover and continue cooking for the remaining 40
mins.

Spicy Wine Pot Roast Ingredients :
2 kg topside roast salt and pepper 1 onion chopped 1 pkt maggi brown gravy mix 1 cup water 1/4 cup tomato sauce 1/4 cup
dry red wine 2 tsp prepared mustard 1 tsp worcestershire sauce 1
tsp crushed garlic
Method: Sprinkle meat with salt
and pepper and place in crock pot. In a bowl, combine remaining
ingredients and then pour over meat. Cook on auto for 8 - 10 hours. Remove meat,
thicken sauce in pot with cornflour (dissolved in water) and serve with
meat as sauce.

Oriental Beef Pot Roast Ingredients:
1.5kg
lean pot roast 2 tbsp worcestershire sauce 2 tbsp sherry 1/2 tsp
ground ginger 2 tbsp brown sugar 1/2 tsp dill seed. Method:
Cook low 7~ 8 OR high 4 ~ 5 hrs. 30 mins
before serving turn to low and mix 2 tsp cornflour, 2 tbsp sherry to paste and stir into juices.
Cook for final 1/2 hour. Pour sauce over sliced meat.

Malay Beef Curry
Preheat the crockpot on
high for 20 mins
Serves 4-6
Ingredients:
1kg gravy beef cubed 2
tbsp ground coriander 1 tbsp ground cumin 1-2 tsp
chilli powder 2 tsp five spice 1 tsp turmeric
3 tbsp canola oil 1 onion, sliced 4 cardamom pods, squashed
5cm cinnamon stick 1 whole star anise 'flower' 6 cloves
4 potatoes, cubed
3/4 cup coconut cream 1 cup boiling water 2 tbsp
cornflour 2 tbsp lemon juice 2 tsp salt 1 cup frozen green
beans or peas.
Method:
Place cubed meat in a bowl. Measure in the first 5 spices and
toss everything together so the meat is evenly coated with the spice
mixture.
Heat half the oil in a large frypan. add the onion and cook until soft.
Now add half the meat mixture. Cook, stirring, for about 5 minutes.
Meat should be lightly browned Transfer to the crockpot Heat the
remaining oil and brown the rest of the meat before adding to the slow
cooker
Add the whole spices, potatoes, coconut cream and water to the cooker,
stir to combine, and put on the lid and cook on LOW for 8-10 hours.
Stir the cornflour and lemon juice together in a small bowl, then gently
stir this in with the curry, adding salt to taste.
Turn the cooker onto HIGH, (stir in the beans/peas ) and cook for 30
minutes.

Ajillo Moruno
Casserole
Ingredients :
1/3 cup
olive oil 12 almonds 1½ slices sandwich bread 750g chopped beef 3
cloves garlic 4 black
peppercorns 1 cinnamon stick 1 clove 1 pinch cumin seeds 1
tsp paprika 2¼ cups water salt.
Method: In a fry pan, heat the oil
and fry the almonds and bread until lightly coloured. Remove from pan.
Brown the
chunks of meat in the same oil. Crush the garlic, peppercorns, cinnamon,
clove and cumin seeds in a mortar. Add the almonds and bread, add a
dash of water and make paste.. When the meat has turned brown, add the
paprika and stir, then add the paste from the mortar, the water and a
little salt. Crock pot on low for 8-10 hours.
