Crockpot Chicken
Rinse the chicken inside and
out, remove all visible fat.
Ingredients:
1.8kg chicken 1.5 cups breadcrumbs
grated zest of 1 lemon 1 tbsp finely chopped onion 1/4 tsp
dried thyme 1/2 tsp dried marjoram
1 tbsp chopped parsley 2 tbsp melted butter salt and
freshly ground black pepper paprika to sprinkle over
chicken.
Method:
Place all the stuffing ingredients excluding paprika in a bowl and
lightly mix together. If the mixture is crumbly, use a little water or
lemon juice.
Avoid making the stuffing too moist. Stuff the chicken cavity lightly
with this mixture and secure the openings with toothpicks.
Place the chicken in the cooker, breast down. Put the paprika in a small
fine sieve and sprinkle it gently and evenly over the chicken.
Crockpot on low for 7 - 9 hours or on high for 5 hours. Rest for
10 mins before serving to absorb all the juices

Chicken with Spice
Rub
Add no liquid
Rub whole chicken with oil. Mix 1 tbsp curry powder
1 tbsp paprika 1 tbsp flour 1 tsp oregano 1 tsp
thyme 1 tsp celery. Mix all.
Rub over chicken. Put sprigs of rosemary into cavity. Cook 3 hours
on high ~ then 2 - 3 hours on low. Make a gravy from the juices

Crockpot Marinated Chicken
Marinate chicken pieces in red wine, soy sauce, chopped garlic, honey and grated ginger
overnight in covered dish in fridge.
Place the chicken pieces in the crockpot and pour over the marinade.
Cover with lid and cook on high for 4 - 4
1/2 hours in the crock pot.

Honeyed Chicken
Pieces
Place chicken in plastic bag and add flour.
Shake to coat Melt 2 tsp butter and 2 tbsp Honey together and add
1 tsp curry.
Dip chicken pieces into the sauce and place in crockpot. Pour remaining
sauce over chicken. Cook for 6-8 hours on low.

Crockpot Lemon Chicken
1.5kg chicken takes
7-9 hours on Low/auto
Rinse the chicken inside and out, remove all visible fat. Put half a
lemon inside the cavity along with a sprig of rosemary and a sprinkle of
salt.
Add 2-3 smashed cloves of garlic inside. Mix together 3 tbsp olive oil,
sprinkle of black pepper 1 tsp crushed garlic 1 tsp rosemary
finely cut.
Separate the skin from the breast meat with the fingers. Smear most of
the flavoured oil in between the skin and breast meat.
Rub outside of the chicken with the other half of the lemon, squeezing
some of the juice, and smear over the balance of the oil mixture.
Place in crockpot and cook for 5 ~ 6 hours on high, until the chicken is
cooked through. Check temp with thermometer.
Rest for 10 mins before serving to absorb all the juices

Chicken with
Pineapple
4 to 6 large chicken pieces skin removed 2 tbsp flour
450g tin pineapple pieces 1/2 tsp ground ginger 1 tsp
paprika 1/8 tsp cayenne pepper
1 pkt onion soup 1 tbsp cider vinegar
Method:
Toss the chicken pieces in flour and
put in crockpot. Sprinkle any remaining flour over the chicken pieces.
Drain pineapple and reserve juice.
Put pineapple in crockpot. To the pineapple juice add the ginger,
paprika, cayenne pepper, onion soup powder, and vinegar and stir till
smooth.
Pour over the chicken and pineapple. Cover with lid, cook on low /auto
for 5 to 7 hrs, or on high for 3 to 4 hrs.
If cooking on low /auto, 30 mins prior to serving turn the control
to high, the contents will come to the boil and this helps thicken the
gravy.

Crockpot Bulk Chicken Wings
Ideal for pot
luck Dinner Can be frozen and reheated
Ingredients:
Bulk pack of chicken wings, chopped
once at the first joint Place in a plastic bag with olive
oil and shake to coat..
Lay on baking paper on trays and sprinkle two chicken oxo cubes
over the top Salt and pepper and grill in oven. Part cook so nice
brown tinge
Ingredients
for sauce:
2 tbsp soy sauce 2 tbsp hoisin sauce
2 tbsp honey 2 tbsp dry white wine 1 tbsp grated
ginger ground black pepper
2 tbsp cornflour 4 tbsp water
Method:
Layer chicken in bottom of crockpot. Combine soy sauce,
hoisin sauce, honey, wine, ginger and pepper. Pour sauce over chicken.
Cover and cook on low about 4 hours. Mix cornflour and the
water. Remove chicken pieces from crockpot and set aside
Turn on high and add cornflour mix Continue to cook until
thickened Add chicken back to to heat through. Taste and re season
if required.

Hungarian Chicken
Serve, top with sour cream
and sprinkle a pinch of paprika.
Ingredients: 6 - 8 large skinless chicken pieces 1
med onion, chopped 2 cloves crushed garlic 1/4 cup flour 1 tbsp
paprika 2 tsp dried chicken stock 1 tbsp dark soy sauce 1 400g tin
tomatoes 2 tbsp tomato paste 1 green capsicum sliced finely low-fat
sour cream to serve. Method:
Place onion and garlic in cooker. Combine flour and paprika in a
plastic, add chicken pieces and shake till well coated.. Empty the
flour mix over the onion and garlic. Toss to mix and spread evenly over the
base of the cooker and place chicken on top. In small bowl combine
stock, soy sauce, tomatoes and tomato paste and mix well. Spoon this
mixture evenly over the chicken pieces. Cover with lid and cook on
high for 4 - 4 1/2 hours in the crock pot.. Add capsicum thirty mins
before cooking time is complete.

Chicken with Vegetables and Parmesan
Ingredients: 6 large skinless chicken pieces 2 large
carrots, diced 1 large onion, finely chopped 2 cloves garlic,
crushed 1/3 cup flour 2 tsp dried chicken stock powder 1 tbsp Dijon
mustard 3 tbsp soy sauce 1/4 cup dry white wine 2 tsp dried thyme 300g courgettes, sliced thinly on the diagonal
3/4 cup grated parmesan or tasty cheese. Method: Combine carrots, onion and garlic in cooker
and sprinkle the flour and dried chicken stock over the veges. Toss to
mix. Place chicken on top. Mix the Dijon to a paste with the soy sauce,
add the wine and stir until smooth. Spoon this mixture over the chicken
and sprinkle with thyme. Cover and cook on low for 8-9 hours. 45
mins before cooking is complete, give the carrots and onions a gentle stir. Add the courgettes and
stir again. Cover and complete the cooking. Serve the chicken,
vegetables and gravy sprinkled with the cheese

Honey Chicken and Sesame
Ingredients:
Chicken wings salt and pepper to taste 2 cups honey 1 cup
soy sauce 1/2 cup tomato sauce 1/4 cup oil 2 cloves garlic, minced
Method:
Rinse chicken and pat dry. Cut each wing at joint to make two
sections Sprinkle wings with salt and pepper
Place wings in roasting dish and grill until chicken is brown.
Transfer chicken to crockpot..
For Sauce: Combine honey, soy sauce,
tomato sauce, oil and garlic in bowl. Pour over chicken wings.
Cover and cook on low 4-5 hours or on high 2-2 /2 hours Garnish
with roasted sesame seeds.

Sesame Chicken
Serves 5
1 lemon 2 kg chicken 1 tbsp soy sauce 1 tbsp vinegar
1 tbsp brown sugar 2 tbsp tomato paste 1/4 tsp ground ginger
3 tbsp sesame seeds
Cut lemon into 1/4's and place inside the chicken, place chicken in
crockpot
Combine the soy sauce, vinegar, brown sugar, tomato paste, and ground
ginger and mix till smooth. Spoon over chicken in crockpot
Sprinkle with sesame seeds. Cover with lid and cook on low/auto
for 6 to 8 hrs or on high for 3 to 4 hrs.

Tarragon Chicken in
Cider
Ingredients:
12oz pearl onions 1 tbsp oil 4 garlic cloves, peeled 4
boneless breast portions skin on 11/2 cups hard cider 1 bay
leaf 1 cup crème fraiche
2 tbsp tarragon salt and pepper.
Method:
Put onions in bowl of hot water for 10 mins, peel and leave whole. Heat
pan with oil and cook onions for 10 mins or till lightly browned
Add garlic and cook 2 mins, remove and transfer to crockpot .Place
chicken breasts in pan and cook till lightly brown and transfer to
crockpot
Pour cider into pan, add bay leaf and salt and pepper and bring to boil.
Pour hot cider over chicken and cover cook on low for 4-5 hours.
Lift out breasts and put aside To the cider sauce, stir in crème fraiche
and return chicken to cook a further 30 mins on high.
