Crockpot Hangi
Wrap all veges, meat and stuffing in cabbage leaves (or tin foil) and
then sit in crockpot with a little water at the bottom. 2 ~ 3
packets in all.
Things you can use:
cabbage potato kumara pumpkin ball of stuffing
about the size of a golf ball
Mix and match the meat, as per a traditional hangi a lamb or pork chop
and a piece of chicken per parcel.
For a smoky taste, add liquid smoke. Cook on high for approx. 6-8
hours Salt it once out of crock pot and ready to eat

Rice Pudding
2 hours 40 minutes on
high
5 tbsp Arborio
rice ( or short grain rice) 3 cups of milk 2 tbsp sugar, pinch
salt 1 tsp vanilla essence 1 tsp butter
pinch of nutmeg
Mix all together in crockpot stirring every so often while cooking.

Rice Pudding v 2
Stir
through raisins about 15 min before serving

litres milk 1 cup uncooked rice 1 cup sugar 1/4 tsp
salt 1 tsp vanilla 1/2 cup raisins 1/2 tsp ground
cinnamon.
Combine all ingredients in the slow cooker Stir to blend well Cook
on high for the first 30 minutes.
Turn to low and cook as long as needed to get desired thickness. Check
after the first 2 hours of low cooking and stir.
If the rice is not absorbing the milk quickly enough, turn the slow
cooker to HIGH again. Keep covered at all times.

Porridge
Put
it on before you go to bed
11/4 cups of rolled oats 1/4 tsp salt 3 cups of
cold water.
Place the rolled oats, water and
salt into a pyrex casserole dish. Place the dish on a trivet or preserving
jar ring in the crockpot.
Do not cover the dish or add water to the
crockpot. Place the lid on crockpot and cook on low/auto for 8-10
hours. Stir well before serving.
Pour into bowls and add cream or milk
and brown sugar.

Butterscotch
Pudding:
Pre-heat crockpot on high for 20 minutes.
Serves 4.
11/2 cups self raising flour 1/4 cup sugar 2 tbsp melted
butter 3/4 cup milk 4 tbsp golden syrup
Sift flour and sugar into mixing bowl. Combine melted butter and
milk and add to the dry ingredients. Stir until mixture is well blended.
Spoon into casserole dish ( 6-cup capacity ) Mix together, golden syrup,
1 tbsp butter, 1 cup boiling water for the sauce .
Stir until the butter is melted. Pour gently over the pudding mixture.
Place casserole dish on a trivet or preserving jar ring in the crockpot.
Do not cover the dish or pour water around it. Cover the crockpot with
lid and cook on high for 21/2-3 hours.

Chocolate Fudge
Pudding
This
is the crockpot version of our self saucing pudding
1 cup flour 1/2
cup brown sugar 1/4 cup sugar 3 tbsp cocoa 2 tsp baking powder dash salt 1/2 cup milk 2
tbsp vegetable oil
1/2 tsp vanilla 3/4
cup brown sugar 2 tbsp. cocoa 13/4 cups hot water.
In large bowl,
combine first 6 ingredients and stir to combine. Add milk, cooking oil
and vanilla and stir well. Pour into crockpot.
In a medium bowl, stir
second amount of brown sugar and second amount of cocoa together. Add
hot water and mix well until blended.
Pour over batter in crockpot; do
not stir Cover crockpot and cook on high about 2 hours or until
toothpick inserted in centre comes out clean.

Steamed Fruit
Pudding
Serves 12
500gm mixed fruit 1/2 cup brown sugar 75gm butter 1/4
cup freshly squeezed orange juice 2 tbsp brandy 1 tsp baking soda
2 lightly beaten eggs 1 cup self raising flour 1 tsp
mixed spice.
Combine fruit, brown sugar, butter, orange juice and
brandy in pan. Heat until butter melts and mixture begins to boil.
Remove and allow to cool.
Add baking soda and
allow to cool completely. Grease and line base of 10 cup pudding bowl. Add
eggs to the cooled mixture and mix well.
Fold through
flour and spice. Pour mixture into bowl, cover with double layer of
foil and secure with string.Cover with lid and place in slow cooker.
Add water half way up the sides of the basin. Cover and
cook on high for 7-9 hours. Can include grated apple and
carrot as well as mixed fruit.
