Every time you
lift the lid you are adding an extra 20mins to your cooking time. The slow cooker or crockpot is designed to work on
the steam and heat process.
For those circular glass lids, just spin the lid and the moisture
/ condensation will drop off so you can look inside. I do NOT recommend using frozen foods in
the crockpot. Best thawed naturally in fridge before using.
Try to buy the biggest crockpot you can. Will still cook small meals but
will do those large roasts as well.
The new oval crock pots will allow longer items like lamb shanks to be
cooked.
In general, add half your herbs and seasonings and then the other half
just before cooking time ends.
Don't throw those juices away!! Save them in the fridge and skim
off any fat when cold.
Add to casseroles , make a nice soup or use for stock according to what
was cooked.
