Grilled Eggplant
Slice, salt and let sit for 1/2 hour  Rinse, drain and pat dry with paper towels. Baste in olive oil and then grill on BBQ or under hot grill turning when getting brown.
Can add a splash of balsamic vinegar, maybe a little more olive oil, salt and pepper and fresh chopped mint.

Herbed Baby Eggplant            This recipe is good chilled as a summer appetizer or side dish
Ingredients:
1  kilo small eggplants  3 tsp salt  2 tsp finely chopped garlic  1/2 cup olive oil  1/3 cup sherry or red wine vinegar  Freshly ground black pepper
1/2 cup fresh basil leaves, cut into shreds

Method:

Wash eggplant, remove caps and cut into quarters or cut in half. Sprinkle with salt and let drain for 30 minutes. Rinse and pat dry with paper towels.
Spread pieces in a single layer on a baking sheet, cut sides up. Mix garlic and oil, and drizzle over eggplants. Bake 30 minutes until the eggplants are brown and tender. Cool slightly. Rinse basil leaves. Stack leaves and roll into a scroll. Cut across into thin shreds. Set aside .
Place the eggplants in a large bowl and drizzle with vinegar, add basil shreds and toss..

Eggplant Bar B Que
Slice the eggplant into 1cm thick slices vertically, sprinkle a little salt and wrap in a paper towel for about 20 minutes to absorb moisture.
On each side of the slice brush on olive oil. Brush crushed garlic, sprinkle ground black pepper and salt onto each side of the slices.
Wrap each slice with aluminium foil then put on the bbq for around 10 minutes each side.
 If using the oven, layer in roasting dish, cover with foil at 180c for about 20 mins.

  Eggplant Pasta Sauce
Cube eggplant and cook in oil for a few minutes on med heat until tender. . Add sliced red onion, crushed garlic and cook until onion has colour.
Add two tins Roma tomatoes and a tablespoon balsamic vinegar.  Simmer for 15 minutes. Add 2-3  tbsp of cream.
Tip sauce into cooked pasta (penne) and add mozzarella and torn up pieces of basil.

  Aubergine Au Miel    ( Honeyed eggplant )
Slice eggplant 1cm thick and add salt to get bitterness out. Cover and let sit for 10 mins. Sauté in hot pan with some oil and 3-4 cloves chopped garlic
Add sauce put in oven for ten minutes.
Sauce:
Add 1 tbsp grated ginger  2 tsp of cumin  1/2 tsp cayenne pepper   5 tbsp of honey   juice of 1 lemon and rind   5 tbsp of water  ~   Whisk together till smooth

Eggplant Fritters
Mix 1 cup of pea flour with 1/2 cup of water to make a thin batter.
Add salt, pepper, and some spices of choice ~ seasoned pepper, Cajun seasoning, spicy seasoning, coriander, cumin.  Leave to stand, it will thicken a little.
Thinly slice eggplant, dip into batter and fry in hot oil until brown & crispy. Batter needs to be quite thin.You can use this batter to make Vege fritters too
