  Devilled Chicken Breasts

  Naan Bread                                   Use these for burritos with chilli mince and salad and cheese or any curry meal
Ingredients:
4 cups flour    2 tsp baking powder   11/2 cup hot water    2 tsp salt   4 tbsp kremelta 
Method:
Start melting the kremelta in the m/wave. Place flour, salt and baking powder in a mixing bowl of your mixer. Add hot water and kremelta.
Mix using dough hook until smooth. Knead for a bit. Leave 10 mins or longer. Make into egg sized balls and roll out as thinly as you can.
Cook on almost high in a large non-stick pan or on bbq plate. 1 min a side and turn. They will puff up slightly. Keep warm with tinfoil.

  Chicken Curry
Ingredients:
2  onions finely chopped  2  cloves finely chopped garlic  25g  butter  1  tbsp curry powder  600g chicken tenderloins or breast diced.
400ml can coconut cream  1 tsp chicken stock  salt and pepper to taste
Method:
Stir fry the chicken pieces for a minute or so and set aside. Fry onion and garlic in butter until soft but not brown, and add curry powder.
Stir and cook for a minute or two,  add the coconut cream, chicken stock and mix in well.
Now add the chicken pieces and simmer 15 mins, adding salt and pepper to taste

Spicy Chicken Curry
Ingredients:
Two medium sized onions  5 cloves of garlic  1 tbsp ginger  tinned chopped tomatoes 1  tbsp soy sauce  coconut milk  curry powder 
3  carrots  1  potato  handful of beans

Method:

Par boil the carrots, potatoes.  Next, sauté in olive oil, onions garlic and ginger. Then add quarter can of tinned chopped tomatoes 
3/4 can of coconut milk  soy sauce  2 tbsp of curry powder, the potato, carrots and beans.
Boil chicken pieces in water in a separate pot, then peel off the skin. Stir fry the chicken for a minute or two and add the chicken to the pan.
If you wish, add 3-4 tbsp of desiccated coconut.      Simmer for about 10 minutes.

Curried Chicken Wings                     Van add ginger and garlic if desired
In a big bowl mix 1 cup yoghurt  1 onion diced  1 tsp coriander  2 tsp cumin  chilli paste to taste 1 tsp paprika  lots salt & pepper.
Mix well, stir in chicken wings. Marinade overnight. Bake in oven till cooked (about 30 mins)

Fruity Chicken Curry with Rice
1 tsp olive oil   1 tsp ground cumin  1 tsp curry powder  1/4 cup chutney  1 tbsp white vinegar  400g can tomatoes  1 onion, chopped fine
1 tbsp honey   1 cup uncooked rice   400g chicken breast skinless, chopped .
In non-stick pan, heat oil and lightly fry onion, cumin and curry for a few moments.  Add tomatoes, chutney, vinegar and honey
Bring to boil and simmer 2-3 mins. Add chicken cubes and simmer 5 mins or until chicken is tender. Serve on cooked rice with other vegetables.

Golden Lamb Curry                                       Serve with rice.
Ingredients:
1kg diced lamb leg steaks  1 tbsp oil   1 large onion  2 tbsp mild curry paste   1 tbsp garlic  1 tbsp minced ginger, 1 tsp ground cardamom
1 tsp salt  1 can peeled tomatoes (in juice)  11/2 cups pumpkin diced   2 cups beef stock  1/2 cup plain unsweetened yoghurt.
 Method:
Season lamb with salt and pepper. Heat oil and brown meat. Set aside. In same frypan, sauté onion until lightly browed.
Add the curry paste, garlic, ginger, cardamom and salt and cook until fragrant.  Now add all ingredients (except yoghurt) to crockpot
Cook on low for 4 - 5 hrs. Stir in yoghurt just before serving.

Curried Sausages   
Ingredients:
2  tbsp oil   6-8 pork sausages  1 onion chopped and diced  1 tsp hot curry powder  1 tbsp flour  3/4 cup beef stock  salt to taste  1 tbsp chutney
Method:
Heat oil in a frying pan and cook sausages until golden on all sides and cooked through  Remove and set aside
Pour off all but 2 tbsp fat. Add onions and cook until clear. Stir in curry powder and cook for 30 seconds mixing well Stir in flour and cook for 30 seconds stirring well  Turn up the heat and gradually add stock, stirring constantly until mixture boils. Reduce heat and add chutney  Slice sausages into bite size pieces and add to mixture. Cook a further 5 minutes to heat through. Serve on a bed of rice

Luxurious Curried Sausages                       Serve on a bed of rice or with mashed potatoes and peas.
500 gms sausages   2 large onions, finely chopped    4 tsp curry powder    2 cups beef stock   2 apples, peeled and sliced
2 carrots, peeled and sliced (nuke until just cooked)   4 tbsp mustard pickle   4 tsp sugar   2 tbsp  flour   4 tbsp cold water
Skin the sausages and break into small pieces  Brown these in a little oil.  Remove from pan. Fry onions and pour off any excess fat.
Add curry and cook 1 minute to release flavours. Stirring constantly, slowly add stock. Add carrot, apple, pickle and sugar and simmer 5 minutes.
Return sausages and continue simmering for 20 minutes or until the veges are tender.  Thicken with flour and water if necessary
Variation:
Add a handful of sultanas for a little extra flavour
Chilli Con Carne:                  Serve   ~ over rice ~  burritos ~  naan bread ~ nachos ~  tacos ~ on baked potato.
Ingredients:

500-700g mince  2 chopped large onions   2 tbsp oil  2 chopped large cloves garlic  2 tsp paprika   2 tsp ground cumin  2 tsp oregano
1 tsp chilli powder  1 400g can tomatoes (chopped)  2 cans baked beans  2 tbsp lemon juice  2 tbsp tomato paste.
Method:
In a large frypan, lightly brown the onion in the oil. Add the garlic, mince, paprika, cumin, oregano and chilli powder
Stir over a high heat until the mince is no longer pink. Stir in the tomatoes, cover and simmer for about 15 minutes
Add cans of baked beans, the lemon juice and tomato paste. Thin with water if thicker than pouring consistency.
Cover and simmer 10-30 minutes to blend the flavours.
Variations:
Can add  ~  corn kernels, carrot, courgette,  peppers

Easy Chilli Con Carne:
Brown 500g mince and a chopped onion in 2 tbsp of oil.  Drain off the fat.  Add 1 can Watties mexican spiced tomatoes 1 can Craig's chilli beans.
Heat through.    Pour over a layer of plain corn chips in a roasting pan,  grate tasty cheese over the top and brown in the oven.

Curried Devilled Mince
I
ngredients:
500g mince   1 small onion  apple   banana   40g butter   1 dstsp curry powder   3 heaped dsrtsp flour  1/2 tsp salt 
1 tbsp coconut  1 tbsp jam  1 tbsp chutney  1 tbsp tomato sauce   handful sultanas .
Method:
Boil mince and drain .Stir fry for a few minutes and set aside. Fry onion, apple and banana in butter then add the curry, flour and salt.
Stir for few minutes and add boiling water and stir until smooth. Add all other ingredients and simmer. Add mince  Simmer until tender.
