KFC CLONE CHICKEN COATINGS
  Kentucky Fried Chicken is loved across the country and there are many recipes online that try to duplicate the great taste of Colonel Sanders tasty treats.
After many tries at preparing the perfect chicken I have learned that there are several factors that have a great influence on your finished product.

The three main factors are:
(1)   Use Crisco shortening versus vegetable oil, I find that Crisco tends to do a better job at cooking the chicken
(2)   I grind all my ingredients to a fine powder.
(3)   Obvious, but use a well season flour to coat the chicken before frying. Remember those 11 herbs and spices, they are an important factor in the Colonel's recipe.

  It has been strange that so many people have tried to emulate Colonels Sanders Kentucky Fried Chicken recipe for years and no one has achieved it.
During my Internet travels, I have come across various forums and message boards that have KFC workers contributions giving some clues as to the method and possible recipe to make a clone as near as possible.
Here are some interesting pertinent excerpts from these forums.

(a)  "They used Vegetable Shortening to fry chicken"
(b)   "For original recipe they used the pressure fryer"
(c)   "Chicken used was frozen and thawed out in the refrigerator"
(d)   "Chicken was not dipped in eggs, only water"
(e)   "A certain amount of chicken pieces were put in this strainer basket. It was dipped in the water and shook in there, then it was taken out and shook again
        a certain amount of times to get rid of some of the excess"
(f)   "The chicken was dumped in the pre-packaged flour mixture, I remember once looking at the ingredients but it obviously didn't list the herbs and spices."
(g)  "After the chicken is on top of the mixture there is a certain procedure to coat the chicken and how many times it must be moved around the mixture
       Again I don't remember the exact number of "movements" but the point of this was just so that all batches would be consistent and evenly coated."
(h)   "It is cooked for a certain amount of time at a certain temp every time"
(i)    "When shortening got low more was added, the whole thing wasn't changed but once every few days"
(j)    "To make the gravy, they use powdered chicken gravy, added the right amount of hot water and a small scoop of the very hot shortening used to fry the
        original recipe chicken. This gives it the right flavour and thickens it up. They used to use the crackling in the fryers, but then they substituted that with the powder

KFC secret recipe            Version One
2     x  cups sifted flour
1/2  x  tsp salt
1/2  x  tsp thyme
1/2  x  tsp basil
1/2  x  tsp oregano
1     x  tbsp celery salt
1     x  tbsp black pepper
1     x  tbsp dry mustard
4     x  tbsp paprika
2     x  tsp garlic salt
1     x  tsp ground ginger
3     x  tbsp MSG (Accent)
Method:
Mix all ingredients well in a large bowl. Dip chicken pieces in beaten eggs Turn them over in regular shop-bought bread crumbs.
Finally plunge them in the flour-spices mixture. Heat oven to 180 degrees Place chicken on a tray and cover with foil (shiny side out)
Cook 40 minutes. Remove the foil then cook for another 40 minutes Baste lightly with oil 5 minutes before the end  Let stand 5 minutes and serve

KFC secret recipe            Version Two
2     x  cups sifted flour
1     x  tsp ground ginger
1     x  tbsp salt
1     x  tbsp MSG (Accent)
1/2  x  tsp thyme
1     x  tbsp onion stock powder
1/2  x  tsp basil
1     x  tbsp oregano
1     x  tsp celery salt
1     x  tbsp black pepper
1     x  tsp dry mustard
1     x  tsp paprika
1     x  tbsp garlic stock powder

Method:

Mix all ingredients well in a large bowl. Boil chicken first for cooking purposes. Dip each chicken piece in a bowl of two beaten eggs and little water.
200c degrees fryer  ~  cook approx 4 min . Chicken should be golden brown. Check if cooked through.

KFC secret recipe            Version Three
3     x  cups sifted flour
1     x  tsp paprika
2     x  tsp garlic salt
2     x  tsp onion salt
1     x  tsp dried oregano
1     x  tsp dried rubbed sage
1/2  x  tsp dried rosemary
1/2  x  tsp dried thyme
1     x  tsp dried parsley
1     x  tsp salt
1     x  tsp ground black pepper  

Method:
Combine all ingredients You can double coat the chicken for extra crispy flavour and texture.

Dip chicken in your egg wash, coat with above and and allow to air dry for about 15 minutes.

200c degrees fryer  Chicken should be golden brown. Check if cooked through.
