MARINADES
Basic marinade
Ingredients:
Soy sauce    Worcester sauce    Crushed garlic    Fresh black pepper   Sprinkle salt   Parsley and Tomato Sauce.
Use for      Meat Patties  Mince  Chops   Chicken  Steak

Variations:
Add all different herbs and spices that are relevant to the type of meat.
Add finely chopped fresh chillies to add heat.

Chilli marinade
Ingredients:
Olive Oil    Sweet Chilli Sauce    Soy sauce    Worcester sauce    Lemon Juice    Fresh black pepper    Sprinkle salt   Parsley
Use for      Meat Patties  Mince  Chops   Chicken  Steak

Variations:
Add all different herbs and spices that are relevant to the type of meat.
Add 2-3 chopped,  deseeded fresh chillies for extra heat.

Sweet/Sour marinade       Chicken or Steak
1/4 cup oil   2 tbsp soy sauce  1/2 tbsp vinegar (or lemon juice)  1-2  tbsp honey  1 tbsp tomato sauce   2 crushed cloves garlic.

Steak Marinade
3 tbsp  Hoisin sauce    3 tbsp sherry   1/4 cup soy sauce   1 tbsp barbeque sauce   2 cloves garlic, minced   1 tbsp minced fresh ginger root.

Lamb Marinade
2 cloves crushed garlic   1 tsp crushed ginger   1 tsp ground cloves    juice of one lemon   1/4  cup brown sugar   dash of mint sauce.
Can be used as a baste for the roast as well.

Pork Marinade                                     Turn occasionally
Place in a blender  ~  
1 can stale beer     1/4 cup olive oil      6 cloves minced garlic   1/2 cup honey     1/2 cup Dijon mustard     2 tbsp rosemary
Poke the pork with a knife.  ( stick little slivers of garlic inside of the meat if wanted )  Place all in a zip-loc bag and then marinated overnight.

  Spicy Pork Marinade                           Turn occasionally
Place in a blender  ~  
2 cups of wine vinegar   4 cups of water   4 garlic cloves, minced    2 chilli peppers, crushed  1 tbsp of salt   pinch of cinnamon   1 tsp allspice
Poke the pork with a knife.  ( stick little slivers of garlic inside of the meat if wanted )   Place all in a zip-loc bag and then marinated overnight.

  Chicken Breast  Marinade                  Great for BBQ or pan frying
2 tbsp of honey  prepared mustard  crushed garlic  orange juice  orange zest  a pinch of cayenne pepper.
Place all in a zip-loc bag and then marinated overnight turning a few times.

Mussel Marinade
1 cup of  water the mussels were boiled in.  1 tbsp of Honey  1/2 cup wine vinegar.
Warm these ingredients until the honey is dissolved and then pour over mussels and add some finely sliced onion.

Teriyaki Marinade                             Best done night before BBQ   
2 tbsp soy sauce   1 tsp oyster sauce   1/2 tsp crushed ginger  1 clove garlic crushed   2 tsp honey
Mix all together and then pour over meat and leave for as long as possible in refrigerator.

Spicy BBQ Marinade         Basic Version      Use for marinade, basting and as a table sauce.
Ingredients: 
1 cup watties tomato sauce  1/2 cup water  1/4 cup soy sauce  2 x tbsp vinegar  1 tbsp brown sugar  1 tsp mustard
1 tsp horseradish  1 clove garlic 
2 tbsp worcestershire sauce.
Method:
Combine ingredients in saucepan. Simmer 10-15 minutes.
Variation:                         
Add to Basic Version to make hot and spicy
1 tsp dried oregano  1 tbsp paprika  1/2 tsp garlic powder  1 tsp chilli powder  1/2 tsp ground cloves  1 tsp cracked black pepper
2  tbsp whole grain mustard   2  tsp liquid smoke   2  tbsp onion flakes
Add dry ingredients to basic sauce and mix well. Bring mixture to a boil, then simmer 1 hour over low heat .Beware, it will splatter so cover up

  Barbeque Rib Marinade    Suitable for Pork or Beef Ribs ~ Beef should be simmered until tender and drained before marinating
Ingredients:
1 x tsp hot english mustard  1 x tsp paprika  1/2 x tsp oregano  1/2 x tsp cumin  3 x tbsp peanut oil  2 x crushed cloves garlic
1 x cup tomato sauce  1 x tsp tabasco or similar  2 x tbsp worcestershire sauce  1/3 x cup tomato paste  1/3 x cup brown sugar 
1 x tbsp brown vinegar
Method:
Mix the mustard and dry spices with the oil in a saucepan. Blend in the sauces and remaining ingredients 
Cook on a med heat for 5 mins stirring until combined. Cool before refrigerating. (Store half for later use in glass jar with lid)
Coat your ribs and marinate over night..
Cook on BBQ basting and turning frequently until cooked through or bake in the oven in roasting dish basting every so often.
