Super Meatloaf like MA used to make        Preheat oven to 180 c    (Well worth the effort)
Slice up two sticks of celery  2 medium onions and three rashers of rind less bacon and fry in oil.. Chop bacon into fine pieces.
In a bowl add  ~  1 egg  1/2 cup of milk  3 crust less slices of bread  1/2 cup of parsley  1/2 cup of grated carrot  1 tsp dijon mustard
2 tsp curry powder  2 tsp cumin powder  2 tbsp tomato sauce 2 tbsp worcestershire sauce  salt and ground black pepper .
Now add the celery onions and bacon pieces and mix all well together. Add 500 gms of minced beef and 500 gms of sausage meat.
Mix well using wet hands and place into loaf tin .Place in oven for 30 mins at 180c and while waiting make the sauce.
Sauce:                         
In a saucepan place ~ 3/4 cup water  3/4 cup tomato sauce  2 tbsp honey  2 tbsp worcestershire sauce   2 tbsp white wine vinegar
1/4 cup of brown sugar   ( Can add 1 tsp of instant coffee if desired )  On low heat stir until blended.
Method:
Remove meatloaf from oven and pour off excess fat. Pour over sauce and replace in oven at 180c for a further 30 mins. Baste often.
Meatloaf Onion Marmalade                         Serve with meat loaf that has no sauce.
2 tbsp oil  2 large onions sliced  1 tbsp minced garlic  zest and juice of two oranges  1/2 tsp coriander  1/2 tsp mixed spice  1/2 cup brown sugar
Heat oil, add onions and sauté for 15 mins until beginning to brown. Add all other ingredients and cook further 10 mins until mixture is thick.
Cool, and serve with the basic meatloaf that has no sauce. Will keep in airtight container if fridge.

Basic Meatloaf                    Preheat oven to 180 c         Can use BBQ sauce as the topping.
Take 500gm mince and add a tube of sausage meat.  Add 2 eggs  1 cup flour   grated carrot  grated potato and/or kumara   1 diced onion.
Add a squirt of tomato sauce  1 tsp soy sauce,  pinch of salt  2 tbsp parsley and mix all together
Method:
Mix all loaf ingredients together and place into a large loaf tin    Bake 30 mins at 180*C.
Remove & drain excess fat, pour pre-made sauce over and cook further 45 mins, basting while cooking.

Supreme Meatloaf              Preheat oven to 180 c
Ingredients:
1 kg ground beef mince  1 cup fresh breadcrumbs  1 tsp crushed garlic   2 tbsp chopped parsley   1/2 tsp paprika  1/2 tsp basil
1/2 tsp oregano   1 onion finely chopped   2 eggs   3/4 cup beef stock  1/4 cup red wine   2  tbsp tomato paste  2 tsp prepared mustard
1 tbsp worcestershire sauce    salt & pepper 

Method:

In a bowl combine beef, breadcrumbs, basil, paprika, oregano, garlic parsley and onion. Mix well.
Beat eggs until light and then add to the mixture with the stock and wine. Mix well.
Stir in the tomato paste, mustard, worcestershire sauce, salt and pepper. Beat with an electric beater for a lighter meat loaf.
Pack mixture into a well greased loaf pan and bake at 180 c for 60-70 minutes.
Remove from oven and spoon off excess juices.  Serve hot or cold.

Spicy Meat Loaf                         Preheat oven to 180 c
Ingredients:
400g beef mince  400g chicken mince  1 cup dried breadcrumbs  1/2 cup milk  1/2 cup water   2 tsp curry powder  2 onions finely chopped
1 beaten egg  1 tbsp chopped parsley  salt and pepper

Sauce:
1/2 cup water  1/4 cup brown sugar  1/4 cup tomato sauce  2 tbsp vinegar  1/4 cup Worcestershire sauce  2 Tbsp lemon juice
1 small tsp coffee  2 tbsp butter    Bring to boil and boil for 5 mins while stirring..
Method:
Mix all loaf ingredients together and place into a large loaf tin    Bake 30 mins at 180*C.
Remove and drain excess fat, pour pre-made sauce as above over and cook further 45 mins, basting while cooking.

Cottage Cheese Meat Loaf           Serve hot or cold.

ngredients:
500g mince  1 tbsp prepared mustard  1/2 cup rolled oats  1/4 cup tomato sauce  3/4 tsp salt  1/4 tsp pepper  1 lightly beaten egg
1 tbsp finely chopped onion  1 cup (250g pottle) cottage cheese  1/4 cup parmesan cheese.
Method:
Combine all the ingredients, except the parmesan cheese. Press the mixture into a greased loaf tin. Bake at 180°C for 1 hour.
Remove from the oven and top with the parmesan cheese. Return to the oven for 10 minutes
Remove from oven and allow to stand for 5 minutes - for ease of cutting.

Sausage and Mushroom Meatloaf          Serve hot or cold   This loaf freezes well
Ingredients:
1 Kg sausage meat ( 2 tubes ) 1 finely chopped small onion   salt and pepper  1 tsp Worcestershire sauce  1 tbsp chopped parsley 
1 beaten egg 11/2 cups fresh white breadcrumbs or 1 cup rolled oats + 1/2 cup fresh white breadcrumbs  220g can mushrooms / butter sauce.
Method:
Grease a loaf tin.  Sprinkle the sides with additional white breadcrumbs and line the base of the tin with baking paper.
Combine all the ingredients, except 1/2 cup breadcrumbs, in the order given, then press the mixture into the loaf tin.
Sprinkle the top with the remaining 1/2 cup breadcrumbs. Bake at 180°C for 1 hour

Lemon Meat Loaf Balls               Preheat oven to 175 c
Ingredients:
750g beef mince  1/4 cup lemon juice  1/2 cup water  1 egg, beaten  4 slices day-old bread, torn into small pieces  1/4 cup chopped onion
2 tsp salt  1/2 cup tomato sauce  1/3 cup brown sugar  1 tsp mustard powder  1/4 dash ground allspice  1/4 tsp ground cloves   6 slices lemon

Method:                                     
Grease a 9x13 inch baking dish
In a large bowl, mix together the ground beef, lemon juice, water, egg, bread, onion and salt until well blended.
Shape into 6 individual loaves - or large balls. Bake for 15 minutes in the preheated oven while you prepare the topping.
In a small bowl, stir together the tomato sauce, brown sugar, mustard powder, allspice and cloves.   Spoon the sauce over the loaves.
Top each one with a slice of lemon. Return to the oven, and bake for an additional 30 minutes, or until cooked through
