Homemade mince like ma used to make
Note:
adding herbs at the end does not cook all the herb flavour out. Ingredients:
600g - 700g mince 2 beef oxo cubes 2 med onion finely
diced 1~2 tsp marmite/vegemite 2 tbsp of cornflour Water
1/2 cup frozen peas 1 cup small precooked carrot pieces
1 dash of worcestershire sauce salt
and pepper Crushed garlic if desired. Method:
In a medium saucepan, stir fry one onion in a little oil until
browned and then
add thawed mince and cover with water. Boil, stir / break up until
mince is cooked through Drain well Stir fry the mince and onion
for a few minutes and then add fresh water to cover Add marmite and oxo cubes Stir well adding salt and pepper to
taste Add the frozen peas, raw onion and precooked carrots to the
pot. Mix. When ready to serve, take the cornflour and add to 1/4 cup
of water stirring until
smooth Add this to the pot and stir and cook until thickened.
Serve with mashed potatoes Variations:
Add Maggi Oxtail soup to a jug and add warm
water and stir. Add at the end just before thickening and stir through.
Add Maggi Mushroom soup to a jug and add warm water and stir. Add
at the end just before thickening and stir through. Add some sliced
mushroom and / or celery sliced.
Add some mixed herbs at the end while cooking ( or herbs to your liking) For that
curried mince add some curry powder while cooking.

Mince Rissoles
The baking powder helps hold
their shape Thaw
you minced beef by placing in fridge overnight. Break up finely into a bowl. Dice
two med onions and place one in the mince and fry the other in a little oil till
near burnt. Add cooked onion to mince. Now
add to the mince 2 cloves of
crushed garlic, splash of soy sauce, tomato sauce and
worcestershire sauce. 2 tsp chopped fresh oregano 1 egg, lightly beaten
1/4 cup chopped fresh parsley 11/2 cups fresh breadcrumbs 1 tsp baking powder. Method:
Mix together well using your hands Season
to taste with salt and freshly ground black pepper Form the mince
mixture into round patties about 15mm thick.
Place the patties on the BBQ and cook for 5 minutes on each side, or slow cook
in frypan on stove top using med heat until golden brown. Drain on paper towels and serve.
Rissole Glaze
2 tbsp brown sugar 2 tbsp soy sauce 1 tbsp tomato sauce 1 tbsp water
small bunch finely chopped parsley dash of black pepper.
Mix well in saucepan and use low heat on stove top. Pour over
cooked rissoles.

Quick Mince Rissoles
500g
mince 3 tbsp sour cream 1 pkt of french onion soup
3 tbsp fresh chopped parsley Mix together, roll in seasoned flour and
cook. You could add a tbsp of mustard if desired

Rissoles/Meatballs
1 tsp baking powder helps hold
their shape
Ingredients:
In a large mixing bowl, add 1
large onion chopped and cooked in a little butter in the microwave, 1 tsp of crushed garlic
1 tsp of fresh ginger 1 tbsp of HP sauce or tomato sauce, a good dash of worcestershire sauce
a good dash
of soya sauce 1 tsp dry mustard powder and 1 tsp of Coleman Hot English
mustard 1 oxo beef cube 1 tbsp brown sugar 1/2 -3/4 cup breadcrumbs 1
egg 500-600g of mince Method: Mix
all well together, place in plastic bag in fridge overnight for all flavours to
blend. Shape into patties/balls with wet hands and fry.

Meatballs
Ingredients:
400g mince beef 2 slices
bread 1 beef oxo cube salt and pepper finely chopped
parsley celery salt 2 cloves crushed garlic 1 egg
dash of worcestershire sauce
dash of soya sauce 1 tsp dry mustard powder 1 large onion
Method:
Thaw mince in refrigerator and break up
well. Place bread in food processor till crumbed. Chop up one large onion into
quarters and add.
Add all other ingredients adding mince last piece by piece. Wet hands and roll
mixture into smallish balls.
Then either; brown and cook through in a frypan, drop into boiling stock until
cooked or bake in oven and serve with sauce as below.
Variations:
Can add vegetables such as sliced mushrooms
and pre cooked diced carrots.
Serve in a tomato pasta sauce OR satay sauce OR
bisto home made gravy OR sweet chilli sauce
Add mixed herbs OR dried oregano to the processor when mixing.
Boiled meatballs usually get added to spaghetti sauce and served over pasta.
(Any extra can be free flowed frozen and used at a later date)

Easy Mince and
Spaghetti Ingredients:
500g mince 1 onion chopped 1 can of spaghetti 3/4 cup
frozen mixed vegetables.
Method:
Brown the
mince and drain excess fluid. Add the chopped onion and stir through till
cooked. Add the tin of spaghetti and mixed vegetables and stir through until
piping hot. Serve immediately. Nice cold next day on toast

Mince and Cabbage Stir
Add a chicken oxo cube if desired
In a wok, cover 500 grams of mince
with water and cook for few minutes. Drain well, add a little oil and fry with a
chopped onion. Add some salt and pepper to taste. Pour in 400ml of warm water
and simmer for 5 minutes. Mix in 1 packet of maggi chicken noodle soup Mix in 1/2 a shredded cabbage, cover and simmer
for 15-20 minutes stirring every 5 to stop sticking. A little soy sauce if you
wish.

Chinese Hotpot
2 tbsp oil 500g mince 2 medium
onions - chopped 1/2 cabbage chopped 2 tbsp rice 3 cups water
2 tbsp soy sauce 1 tbsp curry powder
1 tbsp sultanas 1 pkt chicken noodle soup mix.
Brown onion and mince in oil. Add all other ingredients except cabbage, bring to
boil and simmer for 20 minutes.
Add cabbage and cook 15 mins more.

Easy Chilli Con Carne
Brown 500g mince and a chopped onion in 2 tbsp of
oil. Drain off the fat. Add 1 can Watties Mexican spiced tomatoes 1
can Craig's chilli beans.
Heat through. Pour over a layer of plain corn chips in a roasting pan,
grate tasty cheese over the top and brown in the oven.

Lasagne
Preheat oven to 200 c
Sprinkle a little nutmeg on top to add a tang Ingredients:
1kg Mince 2
large brown onions 6
large cloves of garlic 500g of grated mozzarella cheese 500g of
grated mild cheese 6 large eggs
6 bacon steaks (or substitute with approx 10 slices of
normal bacon if you can't source bacon steaks) 1 375g of Lego's tomato
paste 1 800g can of diced tomatoes salt/pepper/oregano/parsley 2 boxes of instant lasagne
Method Sauce:
In fry pan, stir and break up mince and
cook thoroughly Drain well.
Dice onions, bacon and garlic and cook with the mince
Add diced
tomatoes. Cook for about 10 minutes, stirring occasionally. Add the bottle of
tomato paste, then FILL the empty bottle with water, put the lid on and shake
the bottle vigorously. Add the bottle of tomatoey water. Stir through and cook
for another 10 minutes. Add the salt/pepper/oregano and parsley, and stir
through. Cook on a very low heat for
about 45 minutes to an hour while stirring occasionally.
Creating the Lasagne: Beat the six eggs, Spoon a layer of sauce on the bottom of
the baking dish. Cover the sauce with a light covering of the egg. Top with a
couple of handfuls of the combined cheeses. Lay the lasagne sheets over the top.
Repeat layering until you get to the last layer. With the last layer use
slightly more sauce than usual, twice as much egg and twice as much cheese to
top off. The more cheese the thicker the crust on top. Place in oven
and bake for approximately 75 minutes. Check that the top is dark and put a skewer
or sharp knife through the middle. If this comes out clean then it is cooked.
Stand for 5-10 mins before serving
Fresh oregano and parsley is best.
Substitute fresh basil for oregano for a change.

Spaghetti
Bolognaise In electric frying pan
with butter,
brown 600g mince, chop up onions, few cloves of garlic, salt and pepper and 1 tbsp brown
sugar. Add some fresh sliced mushrooms, a
tin of tomatoes, a beef oxo cube, some Leggos tomato paste and sprinkle in a little fresh basil. In another pot boil spaghetti
in water, cook about 9 minutes, drain. Add mince and stir through. Top with grated cheese
grill in oven till cheese browned.
