  Spatzla     (german noodles)                        Great side dish   
Place 2 cups of plain flour in a bowl and make a well. Into this well place 4 eggs  1/4 tsp of nutmeg  1/4 tsp of salt
While gradually adding 3/4 cup of milk, stir the flour in from the sides until well mixed.On the stove boil a saucepan 1/3 full of water till bubbling.
While holding a colander over the boiling water, place and stir vigorously the mix so it drips through the holes into the water.
They will form little balls. Cook for a few minutes, remove with a slotted spoon and set aside.
In a fry pan, place some knobs of butter and place the Spatzla into the melted butter and toss.
Now place lots of finely chopped parsley over the top and toss some more until well coated with butter and parsley...Serve immediately
