  Homemade Savoury Pasta Sauce                     Always add herbs last and cook 5 mins only.
1 large red pepper  2 tbsp butter  2 cloves garlic  11/2 cups peeled canned tomatoes or 750g fresh tomatoes peeled  1 tsp sugar  2 tsp cornflour
1/4 cup water or wine.
Cut pepper into small cubes and in covered pan, cook gently in butter with garlic without browning. Add chopped tomatoes and liquid from can.
Simmer, uncovered 10 mins. Stir in mixed: sugar, cornflour, water or wine. Add some fresh basil.

  Homemade Mushroom Pasta Sauce                  Can use cream instead of milk to make more rich or trim milk to make less rich
Sauté sliced mushrooms, chopped onion and diced bacon in butter. When cooked sprinkle with a couple of tbsp of flour, then stir constantly.
It will thicken to a paste. Then thin down by adding milk, a bit at a time, until the desired consistency is reached.
As alternative, make a pkt mushroom soup mixed in a cup of milk to add to this dish.

  Homemade Cheesy Pasta Sauce
30g butter   2 tbsp flour   1 cup milk  1/2 cup grated tasty cheese   1/4 cup parmesan cheese  1 tbsp seeded mustard.
Melt butter, stir in flour, remove from heat and stir in milk gradually, stir over heat until mix boils and thickens, stir in cheeses and mustard.

  Chicken Savoury Pasta Sauce                         A little grated cheese or feta on top to serve.
Cut up chicken breasts or thighs and fry in a little olive oil. Add to the pan onion, mushrooms, garlic, sliced peppers and bacon
Add cream fraiche and stir until heated through.

  Winter Pasta Pesto                                            Freezes well
1 cup parsley 1 clove garlic 1 tbsp butter  1/2 cup cream  1 cup cheese  1/2 cup walnuts lots of pepper and salt.
Whiz all ingredients together to a thick cream consistency like butter
Just stir a few tablespoons through your favourite pasta.
