  PIES (p2)               Click Here    Bacon and Egg Pies
Chicken and Corn Pie                               Preheat oven to 220 c
Ingredients:
1Kg chicken pieces  1 leek halved, washed, cut into 1 cm slices   2 cups corn kernels   420g can condensed creamy chicken soup
6 sundried tomatoes  1/4 cup sour cream  2 tbsp fresh chopped parsley  2 sheets flakey puff pastry  salt and ground black pepper
Method:
Season the chicken pieces and gently pan fry in some butter / oil until golden and cooked through. Cool, chop up and shred..
Set the chicken aside and gently fry the leek in the same frypan until tender but not brown.  Add a little more oil if required.
Remove from the heat and add corn, soup, tomatoes, sour cream and parsley. Mix well , return to low heat and stir for few minutes.
Return  the chicken pieces to the mix and gently stir in. Pour the mix into a pie dish and top with pastry .Prick the pastry and brush with milk.
Bake at 220 for 30 mins or until pastry is crisp and golden.

  Chicken Pie                                             Preheat oven to 180 c
Precook  2 -3 boneless chicken thighs until nicely browned in a little butter/oil  Slice/shred chicken and set aside.
Ingredients:
2 tbsp butter   2 tbsp flour  1 cup finely chopped parsley   fresh ground black pepper   300ml milk  1 cup thawed peas
1 large carrot chopped small and pre boiled   1 chicken oxo cube
Method:
Place the butter in a large saucepan and melt adding the flour stirring all the while  Remove from heat and add the milk and stir a little till mixed.
Add the chicken pieces, parsley, peas and precooked carrots. Add salt and pepper to taste . Place on low heat and stir for a minute.
Line a suitable dish with puff pastry and pour in the chicken mix. Sprinkle the crushed chicken oxo cube over the top
Add a lid of pastry, brush with milk and prick. or alternatively top with mashed potato and a sprinkle of paprika.
Cook in oven for 20-30 mins or until golden brown.

Chicken Pie                                               Preheat oven to 220 c      
In a frypan, cook  ~  one diced chicken breast  1-2 gloves of crushed garlic   shredded ham  pinch of salt and pepper.
In another pan, sauté in butter, 1/2 onion thinly sliced with sliced mushrooms and then add to chicken pan.
Sprinkle 1 dtsp of flour over mix and cook stirring for a min or two. To 1 dtsp of chicken stock, add a little hot water to make a sauce.
Add to dish with 1/2 cup peas.   Pour into a pre-lined flaky pastry pie dish, cover with flaky pastry. Prick the pastry and brush with milk.
Bake at 220 for 30 mins or until pastry is crisp and golden.

  Chicken Pie      quick and easy                  Preheat oven to 200 c
250g tub lite sour cream  1 can Campbell's condensed chicken soup  1 chilli and lime rotisserie store bought chicken shredded up  
small broccoli  florets  grated tasty cheese  paprika.
Mix all together well and sprinkle grated cheese and then paprika over the top.
NOTE: if using a plain flavoured chicken,  add 1 tsp curry powder to the mix.  Bake in oven until heated through and cheese melts

Creamy Smoked Chicken Filo Pie             Preheat oven to 190 c
Ingredients:
2  red medium onions  1 tbsp oil  50g button mushrooms  2 sliced sundried tomatoes  2 tbsp oregano  salt and pepper
1 smoked chicken  250g crème fraiche  12 filo pasty sheets  1 tbsp butter

Method:
Cook onions in the oil, and then add the mushrooms for a few minutes .Stir in the herbs and tomatoes, stir for a minute or two and let cool.
Add the crème fraiche to the onions and mushrooms and season with salt and pepper. Tear up the chicken, add and stir with other ingredients.
Brush 8 Filo sheets with butter and place in 24cm flan tin. Fill with mix and flip overhanging pastry into centre.
Brush remaining 4 sheets and crumple them on top. Bake at 190c for 40 minutes

  Bacon and Mushroom Slice                        Preheat oven to 200 c
Ingredients:
100gm butter  2 spring onions chopped  400g flakey pastry   150 ~ 200gm precooked rindless bacon strips   1 egg beaten
350gm portobello mushrooms, sliced   2 tbsp fresh parsley, chopped    salt and black pepper
Method:
Soften the butter and add spring onions, parsley, salt and pepper and mix well.  Place the pastry on floured board in rectangle  ( 45cm x 25 cm)
Brush some beaten egg around all the edges of the pastry and fold over to form a 2cm raised border.  Prick base all over with a fork.

Brush egg on base.  Spread the precooked bacon over the pastry base and layer the sliced mushrooms on top. Dot the butter mixture on top.
Place in oven for 20 mins until nicely cooked and browned.

  Sausage Meat Pie                                        Preheat oven to 190 c
Mix sausage meat with some grated apple, grated potato, finely chopped onion, dried herbs, 1/2 cup fresh breadcrumbs and an egg.
Line dish with flakey pastry and add the mixed filling . Spread evenly and add a pastry lid  Brush with egg and milk wash.
Bake in a fairly hot oven 190 until pastry is golden and well risen.

  Sweet Pumpkin Pie                                      Preheat the oven to 165°C
 
You MUST "steam" your pumpkin and then mash to a pulp.  Blind bake short crust pastry in a round pie dish   
 In a bowl beat two eggs and 1/4 cup of brown sugar.
 Add a 1/2 tsp of allspice  1/2 tsp of cinnamon  1/4 tsp of ground ginger  1/4 tsp of ground cloves  2 tbsp of orange juice   zest of the orange.
 Mix all together with the pumpkin pulp  Pour into cooked pastry base, spread out and place in pre heated oven for approx 40 mins.

  Pumpkin Pie
Filling:

2 cups STEAMED pumpkin   1/2  tsp each cinnamon, nutmeg, mixed spice    1 cup milk    2 eggs and honey or sugar to taste.
Wizz up in food processor, then fill pie case in flan dish without a top.   Bake fairly slowly until browned and set in the middle.
