  Spicy Potatoes
600g potatoes in their skins, cut into roughly 2.5cm chunks. Par boil, then drain and cool. Set aside.
Make a paste with ~  3 cloves garlic crushed  1/2 tsp turmeric  1 tsp salt  1/2 tsp cayenne pepper with 3 tbsp water. In a large pan or electric frypan heat 5 tbsp oil.
Add the paste into the oil and sizzle 2 mins then add 1 tsp fennel seeds and sizzle further 1 min. Add the pre-cooked spuds.
Cook turning occasionally until well coated, browned and slightly crunchy.

  Hasselback Potatoes                    Preheat oven to 180°C.     Suggestions  ~  parsley and herbs    cumin and cayenne pepper   mixed herbs    lemon pepper
1 large potato per person, peeled   2 tbsp butter, melted   2 tsp green herb stock powder   paprika

Method:
Cut potatoes into centimetre thin slices, cutting almost through to the base but not right through.  Microwave on High for 8 minutes.
Place potatoes in a lightly greased ovenproof dish. Combine butter and stock powder and generously brush over potatoes. Sprinkle with paprika.
Cook in preheated oven for 45 minutes or until potatoes are golden brown.
Variation:
Cut potatoes as before and microwave. Brush butter all over. Sprinkle a little onion salt and pepper and place in oven until potatoes are golden brown.
In sour cream, mix the green onion stock, spread over hot potatoes and sprinkle with paprika.

  Potato Gnocchi
3 cup cold mashed potato  1 egg   1/2 tsp salt   3 cups plain flour
Mix into dough and shape into 50c sized pieces and push around your thumb to make a shell shape Drop into boiling salted water for 10 mins or until floating
Remove and serve with tomato and basil sauce

  Potato Roshti
Place dried grated "threads" of potato into bowl with pepper and salt  Add little melted butter to coat all potatoes.. Olive oil in HOT frypan and layer potato thinly
Cover the base and add small cubes of butter on 4 sides.. (not ontop of potato) lift potatoes and when nicely browned Turn over then add add 4 more knobs of butter.
Add little more salt and pepper  Can add a little grated onion or herbs like cumin, coriander ginger to the potato mix as a variation of flavour.

  Silverbeet and Potato Pie                   Can add sliced mushrooms if desired
Peel and boil potatoes. When almost cooked, add silverbeet leaves for a minute or two.  Mash together with a bit of butter and a little milk.  Layer in a casserole dish
Add sliced tomato, sliced onions and grated cheese..  Bake or grill till top is nice and golden.
