Onion Jam
Ingredients:
1 kg chopped onion   3/4 cup white sugar    splash of balsamic vinegar   1 tbsp mustard seed   2 cup malt vinegar   4 - 5  cloves garlic
Method:
Simmer until thick,  stirring all the while.  Cool and store in jars. Make about 3 cups.
  Tamarillo Jam ( bulk )
24 peeled sliced tamarillo   6 apples   6 onions  41/2 cups brown sugar  11/2 tsp allspice  1 tsp cayenne pepper  1 tsp salt  11/2 cups vinegar
Chop up tamarillo, onions and apples. Mix in other ingredients and boil for one hour.

  Tamarillo and Kiwi Fruit Jam
10 tamarillo  12 Kiwi fruit   6 cups sugar   2 cups of water.
Skin Tamarillo. Peel kiwi fruit and chop both all up . Boil together in water for about half an hour and add the sugar  Boil until sets.
Add strawberry essence - about a tablespoon. Pour into sterilized jars

  Tamarillo and Apple Jam
1.25kg tamarillo, peeled and chopped   500gm apples, peeled and chopped   2cups water  8 cups sugar  1/4 cup lemon juice.
Boil the tamarillo, apples and water until pulpy. Add sugar and lemon juice. Boil for about 30 minutes or until set. Pour into sterilized jars

  Tomato / Strawberry / Raspberry Jam                Mock Jam from tomatoes
1kg firm ripe tomatoes blanched and skinned    1kg sugar    1 lemon    1tbsp strawberry or raspberry essence.
Peel and slice tomatoes and place into pan with sugar,  juice and grated rind of the lemon.
Bring to the boil and boil rapidly till it jells when tested. Stir in the essence, pour into warm sterilised jars and seal.
