ROLLING SPRING ROLLS
   
Steps 1-3: 
Place a  wrapper on your work surface with one point facing you.
Place about 1/4 cup of the filling on the wrapper just above the corner nearest you.
Bring this nearest corner up over the filling and roll half way. 

Steps 4-6: 
Next fold in the side corners. Brush the edges with egg white wash.

Steps 7-9:
Then continue rolling to enclose the filling completely. Roll as tightly as possible.
Cover the completed rolls with a damp cloth and allow the rolls to rest, seam side down. This permits the egg "glue" to set.
