Homemade
Onion Sauce
Try it on homemade chips 4 pkts maggi onion soup 2 cups of
vinegar 1/2 tsp ground cloves 4 cups cold water 2 cups sugar 1/4 tsp
cayenne pepper pepper corns Place all ingredients in saucepan. Mix well. Boil for 20 minutes. Stir
occasionally. Strain. Bottle it up . Makes about 2 litres.

Homemade
Horseradish Sauce
3-4 tsp lemon juice 2 tsp dijon mustard 3
tbsp olive oil 1-2 tbsp of fresh grated horseradish
2 tbsp sour cream big pinch of sal
pinch of black pepper 2 very finely chopped spring
onions
Mix lemon juice with mustard whisking in olive oil. Add all other
ingredients and whisk. Place in fridge to cool and thicken.

Chinese
Ginger Sauce
Ginger is minced, squash with
side of cleaver then use the back of cleaver to mince finely. Same
for garlic
3/4 ginger 1/4 garlic
finely sliced spring onions spicy salt oil (peanut soya or
olive)
In a saucepan heat oil adding all ingredients, frying hot. Pour over
dish
Version 2
1/4 cup light soy sauce 2 tsp minced ginger
pinch white pepper sesame oil to taste.
Combine all together and serve as a dipping sauce or pour over noodles
or rice.

Bleu Cheese
Sauce
Great with Roast beef
11/2 cups dry white wine 3
cups heavy cream 300g good bleu cheese 1/2 tsp
ground black pepper
Method:
Heat the wine in a heavy saucepan over high heat for about 15
minutes, or until reduced to 1/4 cup. Add the cream and reduce to
about 2 cups.
Add the bleu cheese and pepper. Simmer, stirring constantly, until
the cheese has dissolved and the sauce starts to thicken.

Bordelaise Sauce
Used for beef Wellington and roast beef
In a heavy saucepan over low heat,
place 3 tbsp hot butter and cook 2 tbsp minced onion until tender. Stir
in 3 tbsp of all-purpose flour. Cook until lightly browned and
add 2 - 3 tbsp chopped parsley, 1/4 tsp dried thyme and 1/8 tsp ground black pepper.
Slowly stir in 1 cup of beef broth (bouillon) 1/2 cup red wine and 1/4 cup water.
Increase heat to medium high , cook mixture stirring constantly, until
sauce boils and thickens.

Spicy Roast
Beef Sauce
1 cup apple juice 4 tsp
corn flour 1 cup tomato sauce 1 med onion,
chopped 1 tsp salt 1/2 tsp celery seed 1/2 tsp
turmeric
1/4 tsp tabasco sauce.
Mix 2 tbsp apple juice with corn flour. Combine the rest of the apple
juice with tomato sauce in saucepan..
Add onion, salt, celery seed, turmeric, and tabasco Cook 15
minutes Gradually add apple juice-corn flour mixture. Cook 5
minutes longer.
