Smoking tips:
Don't set it up on your deck or in your garage. Set it up on a level, non-flammable surface, outside, protected from the wind.
Rather than use the meths burners while at home, I place the Smoker directly onto the grill of my home BBQ

Always place your fish/meat on the bottom rack of the smoker first  This is the hottest part of the smoker 
Any drippings from the veges etc on top rack will drip onto the meat enhancing the flavours
Scale your fish but leave the skin on ~ skin side down on the smoker grill ~ seasonings on top
Filleted your snapper  ~ Then don't waste those flaps from your snapper ~ smoke them

Onions
While you smoking some fish in that portable smoker , slice some large onions leaving the rings whole and place on tin foil
Sprinkle little brown sugar and black pepper on top

Bacon
While I have got the old BBQ fired up and cooking chicken, I sometime pull out the portable smoker to smoke some bacon
I prefry the bacon strips on the BBQ for a few minutes, then lay them across the top grill of the smoker
Sprinkle little brown sugar  black pepper  and onion salt  Great compliment for the BBQ chicken with smoked onions as above

Variation:
Drizzle a little runny honey with black pepper and onion salt over the bacon
 

Salmon Fillets
Marinade
:
1 cup brown sugar  1/2 cup salt  3 tbsp black pepper  3 tbsp garlic powder  2 tbsp cayenne pepper.
Method:
In a bowl mix all the ingredients together.
Sprinkle and pat into fillets  Set aside for 11/2 to 2 hours. Rinse with cold water.
Pat dry with paper towel and place on tin foil in smoker. A little fresh ground black pepper and a couple of lemon rings on top
