SWEET CORN

Smothering corn with butter and salt is the
traditional way of serving corn on the cob. Instead, try squeezing on
fresh lemon or lime juice or brush with olive oil and sprinkle on your
favourite dried herb blend. Fresh herbs, dried herbs and spices used to
enhance the flavour of corn are ~ thyme ~ paprika ~
chives ~ lemon balm ~ chervil.
Garlic salt also creates a nice flavour boost as well as freshly ground
black pepper

Crusty Oven Corn Ingredients

x tbsp canola oil 8 x medium ears of corn 1/2 tsp salt 1/2
x cup flour Method
Take a round metal pie tin, add the canola oil and heat in the oven for
15 mins at 200 c Meanwhile, remove the corn kernels from the
cob and place in a large bowl. Add the salt and flour to form a thick
batter-like mass. All of the flour should be moist. You may need to
add a few sprinkles of water. Carefully remove the pie tin from the
oven. Rotate so that the
oil covers the entire surface. Quickly scrape the corn mixture into
the hot tin. Press the batter into place with a spoon (do not stir). Bake until a nice crust forms on the
top and it starts to brown about 20 minutes depending on sweetness of
the corn. Remove and invert onto a serving plate. If it is not
brown, return to the hot oven for a few more minutes. Cut into 4 wedges. Variations:

Corn and Vege Fritters
Ingredients:
1 x tin cream style corn precooked broccoli floweret's 1 x
crated carrot 1 x grated potato 1 x finely chopped onion 1 x tsp
crushed garlic
Precooked bacon bits salt and pepper 1 x egg 1/2 x cup self raising
flour 1 x tsp baking powder Method:
Thoroughly mix all the veges
together and add salt and pepper to taste Mix in the bacon bits, baking
powder egg and then gradually the flour.
If the mix is too wet add some more S/R Flour. Smaller thin fitters
cooked in oil both sides till golden brown or place on clean BBQ
hotplate.
